Even though my main character is a warrior, i do have a sin and i've had a mesmer before. To be honest..i like assassins in pve & pvp more than mesmers. When i played my mesmer..i only had a few builds that were even fit to pve with so i got bored. Since a lot of mesmer skills only really effect on a large scale, singular enemies and other critical foes in pvp ( hope you get what i'm trying to say here)They are versatile though..and after a while you'll probably stray away from just mesmer skills. But again, their ability to mess with certain other classes and overpower them tactically is better suited to pvp in my honest opinion.
Assassins, on the other hand, are very fun to play in pvp as well as pve...with their many attack skills and ability to run themselves to places as well as farm makes them valuable too. You can deal high damage at a constant pace unlike most mesmer builds which rely heavily on the foe's actions...which in pve is to an extent, unpredictable. Assassins have many different attack skills like mentioned above...although maybe not as versatile as the mesmer they do have an interest value that could keep you playing.
Not to shun mesmers but, i feel that they are suited to certain aspects of areas and teams and maybe not to others...assassins high damage and awesome attack chains will keep you interested if this is your main dilemma.
Mesmers are more of a...internal damage and shutdown class for lack of better words.
Assassins deal raw damage and have many capabilities for creativeness. And also, just a bit extra..they can perma shadowform which makes some titles a bit easier to get..as well as farming,running,etc.
The decision is yours, but remember to just have fun

I play a sin and I play a mesmer. Mesmer is good for spiking/degen/shutdown. Sins are great for farming/spiking/unique builds. I, personally, never liked mesmer before but enjoy it much more now, that I've gotten into PvE with her and gotten more skills. Sins are enjoyable too, I've never liked Dags, but scythe, and barrage is good too. Gives it more options. It's all in your opinion though.

I'm actually haven't played either of those professions to any large extent but I'll give my opinion anyway.
1) Mesmers probably won't get invited to groups much unless it's a CoP gimmick or something.
2) Assassins seem to have a greater range in builds and stuff so you'd have more builds to mess around with if you get bored of 1-2-3-win PvE builds.

My main is a mes and I love him - three years of GW, GWAMM, and still not lost interest in playing him - but for the post-title-hunting stuff I'd say sin, at least until/if SF is nerfed to oblivion. Sins can solo farm faster and better than mesmers, and are more in demand in perma/cryer team builds as only the sin can perma but any caster can run cryer if they take mes secondary, plus they're great for running friends/guildies/second accounts around.
If you have no interest in playing your sin as a perma then I take it all back, play mesmer. There's so many different playstyles available and so many builds to choose from now that some key skills and elites have had a makeover, and they look GOOD. (Granted, other caster classes such as monk or necro are more in demand and more versatile/OPed than mesmer in PvE, but as the choice was sin or mesmer...) Playing shutdown vs the hydra in Skyward Reach for Nicholas this weekend was so much fun!

This question is all down to personal preference of what you like to play. Do you prefer melee or caster? Both classes are very effective in both PvE & PVP and are very versatile.
If you're planning on playing mostly with H/H then it may be slightly easier as an assassin for aggro control. Personally, I prefer mesmer since my main is a warrior and I get enough melee play with that.

I play Mesmer as one of my main pve characters and will freely admit that they won't be suited for everyone. As stated, they are more of a finesse class and wont be throwing out large numbers like an Assassin chain. One of the things that Mesmers do that has a hard time being measured is shutdown or interfering with opponent actions. Increasing casting times or interrupting attacks via Illusion magic don't exactly have the same impact as spiking but are very effective in turning the tide of a fight. I see it as more of a difference in personality, A type people would probably enjoy getting into the thick of things and causing big physical numbers while B type people would rather sit back and influence the battle via hexes, shutdown and general interference.

You just pointed to why I have two mains. I have found sins are better at title farming but mesmers are better at directing hero's, setting up discordway etc. Really, what matters is most is your playing style. If you enjoy melee more roll up a sin. If you want a multiple role char that can support parties and hero groupings take a mesmer. Funny thing is, when I vanquish I use them as sin/mes or mes/ sin. The class synergy is exceptional. (BTW) if you want to absolutely own pve take necro instead. Soul Reaping is mega broken.

My main is mesmer and I find it much easier to get into groups than an assassin. Unless you're perma, the monks will either get after you not to tank before the quest/mission starts or not heal/prot you. Mesmers are what kept me playing since they have diverse builds and strong quick damage. Fast casting is nice because you can fit a lot of spell in a short period of time and back off easily if there's too much pressure.
I love playing assassins though, even if they blow in hard mode except for crit sycthe and perma.
